MALTERSERS & TIM TAM BALLS
Maltesers_Tim_Tam_Balls 1 packet Tim Tams (or any chocolate-coated biscuit)
1 cup Maltersers
1/2 cup condensed milk
1 cup dessicated coconut (plus more for coating)

(1) Crush the Tim Tams and Maltesers in a food processor (I use a good ol' rolling pin).
(2) Add the condensed milk and coconut - mix well.
(3) Roll into balls and cover with some coconut (or chocolate sprinkles for extra decadence).
(4) Pop the balls in the fridge until time to serve. Easy but impressive!

CORNFLAKE MERINGUE COOKIES
2 egg whites
1/2 cup sugar (I prefer Caster)
3 - 4 cups cornflakes

(1) Pre-heat over to 150ºC.
(2) Beat the egg whites until they start to form bubbles.
(3) Gradually add the sugar and continue to beat until stiff peaks form, like they do when making a Pavlova. I always do the 'tip the bowl over your head' trick - if the texture is right, nothing should land on your head!
(4) Fold in the Cornflakes, trying not to crush them too much!
(5) Scoop out tablespoon-sized 'dough' onto a greased or baking-paper-lined sheet. Pop them in the oven for 25 - 30 minutes. When time is up, don't open the oven door straight away! I find if I leave them in there to cool, the outside becomes crispy while the centre is chewy - just how I like it!

BAKED SWEET POTATO FRIES
1 kg sweet pototo
2 Tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper

(1) Pre-heat oven to 200ºC.
(2) Cut the sweet potato into sticks 1/4 to 1/2 inch wide. I find the easiest way to do this is to slice the sweet potato on the diagonal before cutting into sticks. Toss them in the oil.
(3) Mix together the garlic powder, paprika, salt and pepper. Toss with the sweet potato. Spread them out onto a baking tray lined with baking paper. Use 2 trays if you need to, you want to have enough space between the fries for them to bake and turn crispy!
(4) Bake for about 15 minutes or until the fries are brown and crisp on the bottom. Then flip and cook on the other side until crisp, about 10 minutes. Serve hot. Easy but impressive!
